I am wondering if it is possible to set up a boot disk so I can start
up the system from CD instead?

1) yes
2) you might want to try a Live CD such as Knoppix or Elive - it will boot
and run from the CD without any installation at all.
3) why not dual boot? It really is trivial to do. Ubuntu will, if you want
it to, set up every OS resident on the system to do a multiboot - no muss,
no fuss, no bother.
